As the title states, I’m really hoping to find a good pair of Bluetooth over-ear headphones that have ANC but also allow you to use it wired WITH the microphone.
This would rule out Sony, since the microphone isn’t passed through the aux cable.
Hoping someone knows something, because trying to find one has been challenging! Thanks in advanced!
Is it not just easier to buy an aux cable with an inline mic?

Sennheiser PXC550-II. But their cable-bilities (lol) suck. And Bluetooth back/forth/pause is so bad compared to cable buttons

And it supports a large array of BT protocols. AptX HD is much better the LDAC in my opinion.
I think some Steelseries Arctis headphones do that, but you’d have to research that
Does the mic also have to be bluetooth? It’s not exactly what you asked for, but depending on your exact use-case, the ModMic might be interesting for you. It’s a standalone headset mic that you can just slap on any normal over ears. It allows you to independently choose a nice pair of headphones from a much wider selection and use them as a headset. Only real disadvantage I see is the extra cable, but it’s manageable.
Btw, what you’re looking for is headphones with a “TRRS” (not TRS) jack/cable. Look for that in the specs, or find a photo of the plug and make sure it has exactly three (usually black) rings. (TRS will only have two.)
Your instructions are completely correct, but it might make more sense to look at the bands of metal rather than the insulator between them.
TRS stands for “Tip, Ring, Sleeve”, referring to the 3 contacts on a TRS jack - one for the left channel, one for right and one for ground. TRRS as you might guess has an extra ring to provide a contact for the microphone as well. So you’re looking for the metal tip, two rings of metal and then the metal sleeve.

I wanted to give an update, I eventually pulled the trigger on Sennheiser Momentum 4! It runs both audio and mic through USB making it perfect, plus they sound incredible! Very happy with my purchase. Thank you all!
